Although you can probably subsist on margaritas and guacamole – aw, college – I like to have a little something that constitutes a meal on Cinco de Mayo! And I really can’t get over how quickly and easily this Citrus Salsa comes together. It’s one of those ready-in-minutes toppers for whatever fish or chicken your heart desires. The sweetness from the fruit coupled with the bite from the jalapeño and red onion is something you must witness for yourself! Brighten up your plate with this gorgeous tropical fruit mix! It comes together so quickly and really brightens up the meal.
1/2 cup pineapple, chopped
1/2 cup mango, chopped
1 kiwi, peeled and chopped
1/4 cup English cucumber, peeled and chopped
1 tablespoon red onion, minced
1/2 jalapeño, minced (about 1 teaspoon)
1/2 lime, juiced
1 tablespoon cilantro, chopped
Add all ingredients to a medium mixing bowl. Gently stir to combine, being careful not to destroy the fruit!
Serve on top of your favorite cooked fish, shellfish, or chicken.
