Cinco de Mayo is almost here! Do you know where your avocados are?! You better because I have a treat for you! I’ve put together a fresh and simple menu that includes all of my go-to Mexican favorites. The ingredient lists are short but the flavors are phenomenal. So use the best ingredients you can find! And OMG, I love y’all so much I put together a shopping list, broken out by recipe! Make part of it or make it all. Either way I hope I’ve given you a little inspiration for your next Mexican fiesta.
CUCUMBER + ST. GERMAIN MARGARITAS
First, this Cucumber + St. Germain Margarita. GRRL PLEASE. Four ingredients and you’re seein’ STARS it’s so good. It’s the only margarita I make anymore! I like to use 100% agave tequila to keep it crisp and clean. And to make life easier for you I’ve included the measurements for 1, 2 or 4 margs IN the recipe. Math is hard enough sober, amiright? No Cinco de Mayo celebration is complete without my Holy Guacamole. This is the recipe I’ve been using for years now and it’s stood the test of time. My girls inhale it with tortilla chips but I often serve it with crudité. Speaking of my girls, outsource the avocado mashing! If you have kids or guests that want to help in the kitchen, put them to work! And if you love guac or are surrounded by guacamole-lovers then consider doubling the recipe. Finally, a swoon-worthy main dish. This Citrus Salsa is SO BRIGHT! It works incredibly well on a variety of proteins, lending a freshness to the plate. Here I used baked cod but the salsa is equally as delicious on top of salmon, chicken, shrimp or another firm white fish, like halibut. I keep the seasoning on the protein simple: kosher salt, freshly ground black pepper, and a little shake of paprika. The salsa topper is the real star here! Click HERE for the salsa recipe.
As promised, here is your shopping list for my little Cinco de Mayo celebration. Pick one, pick all! Do note that 1 English cucumber, 1 bunch of cilantro, and 1 small red onion will be enough for ALL of the recipes. You don’t need 2 English cukes if you’re making the margs AND the salsa. I got you!
