W30 Round 2, Day 30: In. The. Books. 🏆

Oooooooo we’re back in the swing of things! Monday mornings we’re at school early for music practice so I have to be even SPEEDIER about actually getting out of bed when my alarm goes off and making breakfast. I’m telling you, Crispy Fried Eggs are it. They were the perfect topping for the last of the baby spinach I sautéed in a little ghee with Primal Palate’s Adobo Seasoning. I reheated two of the Fed & Fit Cinnamon Sage Sausage Patties (in her book, page 143) and added some mango I’d cut up for the kids and blueberries just for me. I’d be lying if I said I got to savor this. The first few bites, sure. But then when the clock said 7:15am I just started shoveling it in while walking my plate to the sink!

Repeat after me: “I will not shop Costco on an empty stomach.” Breakfast at 7:15am and a Costco errand at 11am means if I don’t have at least a liiiiittle something then the entire baked goods section is coming home with me. Have mini Apple Pie Lärabar; will eat. Crisis averted.

Bring snacks! Do NOT shop Costco hungry. You’ve been warned.

Woo hoo! My favorite “I didn’t even make it in the first place” leftovers were for lunch today. My leftover Chipotle Carnitas Bowl was looking a little sad. I think I ate much more than half of the carnitas last night! And I was out of cauli-rice. And we ate all of the guac. Time to improvise! I cooked up the bell pepper and onions I prepped last night and pulled the rest of the leftover Marinated Steak out of the fridge to reheat with what was left of the carnitas. Then what? TOPPED IT ALL WITH A FRIED EGG. Because the answer is almost ALWAYS a fried egg. Instead of guac or salsa I made a quick ranch-style dressing and OMG! For some reason I thought a cool, creamy dressing on a hot fried egg would be nasty. IT WAS A REVELATION. It blended in with the runny yolk and then made everything underneath creamy and delicious. Ranch FTW again! And always, amiright?

My Nutpods French Vanilla latté. I needed a little pick-me-up after a personally mentally exhausting morning and early afternoon. After I picked the kids up from school I made this almost the minute we walked in the door. It’s getting COLD in NYC and this was a nice warm mug hug today. I also had a handful of those Epic S&P Pork Rinds I’ve been saving and they were DELISH. Who needs Lays and the stomach issues when you have Epic Pork Rinds, Siete’s Tortilla Chips and Jackson’s Honest range of coconut oil chips?!

I wanted to celebrate the end of my Whole30 with a special meal but I just wasn’t in to it today. I’m saving that for either Wednesday or Thursday night, so stay tuned. Tonight it was leftovers with a few add-ons. My husband had the leftover hamburger pattie so I grabbed the leftover bacon meatloaf, but there was no bacon to go with it. So I cooked up the last 4 strips from the already-opened package and then used the fat to roast the last of the Brussels sprouts. We each had a strip of bacon and then I chopped the rest up to top the sprouts. A side of Tessamae’s Ketchup and that’s all I needed tonight. That and a large serving of frozen grapes and a scoop of coconut butter. Because that was my little mini celebration 🎉

I didn’t prep any food but I did take some time to flag a few recipes, meal plan the first part of the week, and make a small shopping list for the morning. I also mapped out my meals for tomorrow’s first day of my Reintroduction: Non-Gluten Grains.

AND COSTCO. As promised, here’s that I saw today and then what I actually ended up buying.

Nuts for days! Great cooking oils! And a few wellness items like books and bath soaks. I love it there.

There were so many great options for Whole30 and Paleo meals. But I live in a NYC apartment and don’t have the luxury of a dedicated pantry, basement storage, or a second fridge/deep freezer. So here’s what made the cut today:

I feel pretty damn proud y’all! 30 DAYS. And while I agree that this was a Whole30 and is not intended to be a Whole365, I’m interested in staying somewhat close to the plan. I’m really looking forward to the next 10+ days of Reintroduction. When I sat down and thought about what I really missed it was just a few things:

• Italian cheeses: Really just my pizza buddies Parmesan & Mozzarella
• Honey: Mostly to bake with or use in sauces
• White rice: I think it’s good for my digestion
• Vodka & Wine: Because kids.

Through Reintroduction I want to see how I do with a few gluten-free things. That could be a good path for me so that I can still bake, which I love, but maybe it’s transitioning from traditional baking to a more gluten-free baked goods style. We’ll see where that goes, along with sugar. The demon never stays quiet for long so I want to see what my triggers are and how I can moderate and indulge without going overboard.

All good things coming up, and hopefully the uncomfortable parts of Reintroduction are short-lived 😉 But for now, I feel better and my clothes fit better so I’m on the right path! Go me!
