W30 Round 2, Day 20: Mos Def Tiger Blood

WHAT I ATE
Breakfast
I woke up just not wanting to think about putting a breakfast plate together. To make the morning easier I just threw together the Mini Prosciutto Egg Skillet, topped it with some nice avocado and called it. There are 2 eggs in there, I just broke the yolk on one. Curse you Universe! That’s not nearly enough to last me until lunch so I knew I’d come home and have my nutpods latté and then a few hours later probably have a small snack before lunch. With kids to get to school? Everyday can’t be a breakfast buffet!

Mini Prosciutto Egg Skillet + Avocado

Snack
After my Nutpods latté I proceeded to clean our apartment from top to bottom. Somewhere around 11am my stomach started growling. Like Rumble City. But I really didn’t want to have lunch that early. One of my favorite snacks is fruit with a nut butter but I looked over at the two tired bananas and that sounded gross. But tired bananas make excellent chia pudding! I mashed 1 banana with 3 tablespoons of coconut milk and then stirred in 1 tablespoon of chia seeds. I would typically put this in the fridge for an hour or so to set up. But I’m impatient as hell and love that crunchy goodness so I ate it straight away. The chia pudding hit the spot and allowed me to put off lunch until closer to 1pm.

Lunch
FINALLY! Those delicious salmon cakes finally sounded, well, DELICIOUS. I spent the entire morning cleaning our apartment, making those bathrooms sparkle, and working up an appetite. I warmed up the salmon cakes in a skillet with some ghee to give them a nice crust. And while those cooked I steamed a small crown of broccoli and mixed up a mayo-based dip with dill, onion powder and a little bit of the liquid from the jar of minced garlic. Secret trick 😏 That plate looked so colorful and clean and fresh. Add a squeeze of lemon. C’mon now.

Snack
I wasn’t really hungry this afternoon. I knew we’d be having dinner on the earlier side so I wanted to just hold off. However I did graze on a some grapes as I washed them. Probably no more than a handful. Some for the fridge, some for the freezer.

Dinner
I thought I might make Skinnytaste’s Crock Pot Picadillo in the next week or so but when I read the recipe again and saw I could do it in 3-4 hours on HIGH it was ON for dinner tonight. I thought my husband and the kids could make soft tacos out of it or put it on rice and I could do cauli-rice. Again. Yea, I needed to mix it up. I spied a few potatoes (1 russet, 1 sweet) and threw them in the oven to bake. The potatoes were done just in time to go pick up my oldest from a last-minute play date. When we got back the picadillo was done but the kids weren’t feelin’ it. My youngest was exhausted went to bed without dinner (!) and my oldest had the rest of the leftover pizza. ALL THE PICADILLO FOR ME! Topped a russet potato with a generous scoop (or two) and garnished it with avocado, cilantro and a drizzle of coconut milk. Side salad for color and leafy greens. Now this was A LOT of food. I ended up not finishing my plate but I didn’t feel uncomfortably full, like AT ALL. I had forgotten about the potato as the unsung hero of the Protein Vehicle world. And it my first real carb-dense veg of the day. Should sleep like a baby tonight.

WHAT I PREPPED
Aside from making the picadillo I picked up a few things at the store on the walk home. I washed up the grapes and baked those two potatoes. I had wanted to hard boil a few eggs but I fell short on time. Tomorrow.

HOW I FEEL
Holy hell you can see our apartment sparkling from space. 🌟 Today I felt very focused and knew I wanted to get a lot done at home. I didn’t get a workout in at the gym because I was literally working up a sweat cleaning our apartment. MAN what a sense of accomplishment. That will all be undone in about 15 minutes tomorrow morning when the kids wake up, but hey, it felt great! I crossed about 8 things off my To Do list, did 4 loads of laundry, and pulled the kitchen back together after a week of mess-making. I want to take these next few days and really get things organized so that I can work more efficiently.

And the one thing I’m doing for myself today is getting to bed early (by my standards) tonight. G’nite until tomorrow!
