W30 Round 2, Day 3: Hazy AF

This was our first morning back at the regular school routine so I’m now getting up 2 hours earlier than I had been on break. Go ahead and let that sink in ’cause I sure as hell did. 😳 I play tennis w a kick-ass group of women on Tuesday mornings for an hour and a half so I need to have a filling breakfast before I head out to that. So eat at 6am and then know I’ll need a mid-morning snack or wait until after school drop off and eat at 8:30am? I woke up hungry at 6:00am but decided to have a cup of hot water and lemon with Vital Proteins Collagen Peptides and wait to eat at after school drop off. Won’t do that again! I was uncomfortably hungry – like stomach growling and gross. I had a plan so I put that leftover spicy turkey bolognese to use in Uova in Purgatorio. And did you know you can steam a single serving of broccoli in the microwave in about 2 1/2 minutes with just a bowl and a plate? Learned that in college 😉 That was breakfast.

I had a few handfuls of chicharrones between breakfast and lunch because I really wanted to get the slow cooker going. And trimming the unbelievable amount of fat off the chicken thighs took an unbelievable amount of time. I wish boneless, skinless chicken breasts were more flavorful. 🤷🏼‍♀️

I mean, we’re not talking high-quality pork here but the ingredients were “pork” and “salt.”

This is hands-down my all-time favorite leftovers hack. I take the cold stuff off my leftover Chipotle carnitas bowl (lettuce, salsa, guac), add the leftover bell pepper-cauli rice mix, and while that’s heating up in the microwave I fry an egg to throw on top. I know. I’m totally brilliant! I was busy prepping my slow cooker recipe so I didn’t eat until almost 2:30pm. Boo.

Leftover Chipotle Carnitas Bowl + Leftover Bell Peppers & Cauli Rice TOPPED with a Crispy Fried Egg

OMG, I dog-eared this recipe way back at the beginning of December. About a year ago I went out to dinner with a fabulous group of women I met when my oldest started nursery school. We went to a local Indian restaurant which was such a treat for me because my husband doesn’t do Indian food so I rarely seek it out just for myself. That night out we ordered a bunch of different things for the table and I fell in LOVE with the Chicken Tikka Masala. So much so that I ordered it for takeout the next day! When I saw the recipe in Fed & Fit I was SO excited to make it. And today was the day. It was a LOT more work than I anticipated because instead of using the recommended 3 lbs. of chicken breasts I used a mix of breasts and thighs. And UGH those were some fatty thighs to trim up. I have to say it was worth it because those were the juiciest pieces. The husband worked late so the kids and I ate probably 2 servings and then I had 4 servings leftover. Three for the freezer and one for later this week. Sa-weet.

Slow Cooker Chicken Tikka Masala + Cilantro-Lime Cauli Rice + Steamed Broccoli

Speaking of sweet, I had the hankering for something after dinner so I had 3 dates with a little coconut butter. Not a nightly routine but Indian food has a tendency to stay with ya! I also had a cup of tea with a generous splash of my NutPod French Vanilla. Totally Whole30 approved – has the stamp on the side to prove it 😉

I took a few minutes before bed last night to write out what I had in the fridge and what meals I could make out of it, plus any groceries I may need. It didn’t take long but I knew today was going to be a big adjustment to our winter break routine of sleeping in until 8am and hanging out in pjs for half the day. On the walk home from drop off I stopped to get the kids’ morning yogurts and picked up a box of butter lettuce and a very overpriced container of pomegranate arils for me. Right now the price was worth the short cut. I wanted those for the Slow Cooker Chicken Tikka Masala I got going before a very late lunch! I didn’t get that Spinach-Mushroom Egg Bake prepped but I have time tomorrow.

I have a lot to work with here and it’s good to see it written out.

Eeew tension headache! Go away! Even had a good night’s sleep. Hmph. So this morning was not fun. I didn’t feel better until almost 4pm, after a shower and a little makeup. I feel another early night coming on, which is to say I’ll be in bed by 10:30pm. My goal is to have lights off on the reg at 9:30pm but I’m working my way down. At the low (high?) point over break I think I went to bed at 2am. But I could sleep until 9am that morning! Still. We’re getting back into the school groove now and that means shutting it down early.
