W30 Round 2, Day 1: Inspired
WHAT I ATE
I went to bed last night really excited for breakfast! The Mini Prosciutto and Egg Skillet + Avocado is actually the only meal today that I had planned out beforehand. I could have planned the first few days but I just focused on stocking the good foods and figured they would come together.
I didn’t have a clue what I was going to have for lunch so I gnawed on some carrots and looked in the fridge. How had I not prepped any cooked veg?! Bilinski’s Wild Mushroom Chicken Sausage with Italian Herbs would be a great protein, and oh yea, my freezer soups! I thawed a bag of Broccoli-Cauliflower Soup in a large bowl of hot water in less than 10 minutes and microwaved it for a few more. Lunch was served.
I grabbed a handful of Bare Apple Chips because my husband and kids were snacking on tortilla chips and that made me want something crunchy.
The family wanted pasta & meatballs tonight so I made my version of an easy Italian noodle dish. It was totally last-minute and thankfully came together FAST. I started with the sauce. I’d just seen a recipe for Uova in Purgatorio (Eggs in Purgatory) and thought if I made it right the sauce could double as bolognese tonight and the base for the eggs at another meal. I beefed up the ground turkey with diced baby bella mushrooms and covered it in a W30 compliant jarred marinara sauce. While the sauce cooked I zipped a zucchini through the spiralizer and sauteed half in a little ghee to warm it through but keep it toothsome. I saved the other half for another meal but wish I would have just cooked the whole thing. I was a little hungry after dinner so I had an apple. Live and learn.
WHAT I PREPPED
I have that half of a spiralized zucchini but clearly I had some veg prep to do! I made a batch of Nom Nom Paleo’s Pressure Cooker Braised Kale & Carrots because it’s easy and delicious and I had the kale. I can pair that as a side with the pork chops I bought yesterday and then make a soup with the bone broth I made last week and add the chicken thighs I cooked and shredded yesterday. There are at least 2 meals right there. BOOM!
HOW I FEEL
I’m feeling inspired! Hey, it’s Day 1 so it’s a bit early to get down. I think I’ve learned more from my cooking in the past few years than I thought I had. Putting flavors and meals together doesn’t feel as challenging right now. And when in doubt a can of tuna + homemade mayo + a bed of greens is always available. I am feeling a little tired but I chalk that up to staying up to watch the ball drop. My oldest was dead set on it and I didn’t want the poor kid to stay up alone. 😴 Thankfully I got to sleep WAY in this morning but still. One of my new year’s resolutions is to get more sleep, ie. go to bed well before midnight, so there’s no time like the present.
Time to dream about tomorrow’s breakfast!
